OK, I messed up. webkit_web_context_set_network_proxy_settings() was indeed replaced by webkit_website_data_manager_set_network_proxy_settings(), which was then itself replaced by webkit_network_session_set_network_proxy_settings(). I knew this, but messed up the documentation anyway.
