To reproduce:
1. Go to http://farukat.es.nyud.net/journal/2010/10/482-addictive-allure-of-instagram
2. Inspect the <body>
3. Uncheck then re-check the -webkit-text-stroke rule
The rule disappears entirely rather than becoming re-enabled.
This happens in both Safari 5.0.2 and ToT.
