Looks like the flaky failure seen on the open source is the known webrtc issues reported here: https://bugs.webkit.org/show_bug.cgi?id=225525 (REGRESSION: [ BigSur ] various webrtc/video-* tests are flaky text failures due to unexpected logging)

Issue is still related to log going in stderr underneath us in BigSur.
Not sure about the crashes.
