I have Version 3.1.1 (5525.18) of Safari and WebKit-SVN-r34257 that I most recently installed. It's crashed twice now (have had it only about 20 min.)
First incident was while I had multiple tabs open (straferight.com, mail.straferight.com [supported by gmail], gmail.com, and facebook.com). While writing a message to a friend on facebook, it crashed. I was upset...it was a really long message, oh well though.
The Second time, I had straferight.com up and I believe gmail.com up. I thought it might crash when gmail automatically updates itself, i really don't know though...as I will probably never understand any of this stuff.
I hope this helps though
