It would be really great if the Gnome version could also allow removal of transparent backgrounds which was recently enabled for OSX (Bug 187574). This would allow users of Gnome to have a dark mode as well I believe?

This would be most of the way to a decent dark mode, yes.
Probably there will be a few additional theme problems (bug #126907, bug #165072, bug #185856).
